Calamari need to be either cooked quickly on high heat, or cooked for a long period on a slow simmer. To clean the squid, first pull out the tentacles and head. Set these aside.
Start by cleaning the Calamari. Holding the body in one hand gently pull on the tentacles to remove the insides, then remove the quill from inside the body cavity, finally peel the skin away from the outside of the body. Once the inside are out you can cut the head away from the tentacles The remove the mouth positioned at the base of the tentacles. Now wash the tentacles and body under cold running water.Once they are cleaned cut the body into rings about 1/4 inch wide.

Start by cleaning the Calamari. Okra is slimey. Even those who detest okra in most forms relish these crunchy fried nuggets. Some folks don’t object to this characteristic and stewed okra with tomatoes and squash is popular with some Southerners.
Vegetables tend to take such things with equanimity and in this particular case it’s probably fair to say the implied insult, uhmm, slid right off. And, in truth, I would probably have ignored this slur to one of the South’s great vegetables myself if I hadn’t just purchased a bag of particularly fine looking specimens and anticipated enjoying them in their true culinary glory this evening.

Cauliflower is generally believed that it was the Arabs who introduced the cauliflower to Europe after the fall of the Roman Empire. I ran out of excuses. I avoided cooking cauliflower till now. The cauliflower flowerets are split in half lengthwise. The potatoes are cut as wedges lengthwise.

But when priced at one dollar, I couldn’t think of any more excuses and bought the fresh, big, Lilly white cauliflower from the local farmers market. Even though, it’s available year round, Autumn is the season for cauliflower here in US, so the low price.

This easy pork chop recipe is a southern favorite. The pork chops are covered in thinly sliced onions and gravy, and simmered to a flavorful finish.
Choose a thicker sliced pork chop that is an even thickness throughout. Chops that are an even thickness will cook evenly with less drying.
Start the chop at a high heat to brown quickly, then finish at lower heat on the stove in the gravy. This produces a more tender and juicy chop.
Watch your heat and do not overcook. Overcooking will cause the chops to dry out. Serve this with a nice bread or biscuit to soak up the extra gravy or over rice. Excellent!
