Fish & Banana With Potato Courgette Pancake
Get the taste buds going with this Caribbean recipe
INGREDIENTS
2lb Red Snapper Fish
2 Cloves of Garlic
1 Green Pepper
Some Parsley
Spring of Thyme
1 Teaspoon of Lemon Juice
1 tablespoon of Fish Seasoning
6 Green Bananas
1 Cooking Onion
Salt & Pepper
METHOD
Have fished cleaned – scaled and gutted at the fish market. Cut fish in half and clean with lemon.
Fry onions, garlic and green pepper finely cut, until onions go golden brown
Add other ingredients with 2 cups of water or enough to cover then
Add peeled bananas that have been rubbed with lemon, season to taste, cook for about 15 mins.

Fried Rice
A terrific rice dish. Very tasty and can be used with any type of rice meal.
Ingredients
Teaspoon Olive Oil
2 Eggs
Tablespoon Soya Sauce
2 Cloves of Garlic
Carrot
Peas
Spring Onions
Tin Sweet Corn
Fresh Coriander
Cooked Prawns
Normal Rice boiled
Chop carrot & spring onion
Boil carrot for 5 minutes
Oil in frying pan or wok. Put in garlic, stir for a few seconds,
Add the eggs and scramble them
Add the rice
Keep stirring and add other ingredients Soy sauce and spring onion
Just before finishing add fresh coriander
Serve.

Potatoes & Courgette Pancake
INGREDIENTS
1Lb Potatoes
2/3 Courgette to suit
Salt
Butter
METHOD
Peel Potatoes.
Grate potatoes and courgette separately.
Squeeze water out of potatoes – add salt.
Put half of the potatoes in a layer, then add courgette on top and the rest of potatoes.
Press in to make Pancake.
Fry in butter on medium to hot pan.
